This site is designed to be a companion to my book,
Homemade Bread Recipes – A Simple and Easy Bread Machine Cookbook.

There are 137 unique homemade bread machine recipes in the book, but I know as you get into them, you’ll want even more. And for new bread makers, a lot of questions come up like:

  • What’s the best bread machine to get?
  • Is gluten really necessary and what is it?
  • Can I substitute ingredients and still get good results?

I hope to answer these questions and more and also give you some recipes that don’t require a bread machine. Maybe even a few bread machine recipes that didn’t make it into the book.

The Digital Kitchen

The Digital KitchenKindle versions of my book Homemade Bread Recipes – A Simple and Easy Bread Machine Cookbook have been selling really well lately. I’ve also noticed a rise in sales for the version for the Nook and the iPad.

That got me thinking about how much things have changed and how digital we are becoming. I know I love my Kindle  and my friend who gave me the picture for this post loves her iPad. As you see, she props it up on her coffee maker so it’s right there as she puts the ingredients together. Our ereaders and tablets are ideal for quickly finding the recipe you want.

Banana Coconut Nut Bread

Oooh, doesn’t this sound like fun for the holiday?!??!?

3/4 cup                              Banana — mashed
3/4 cup                              Buttermilk
1 1/2                                  Eggs
3 tablespoons                    Sugar
1/2 teaspoon                      Baking soda
1/2 teaspoon                      Salt
1/3 cup                              Coconut
1 1/2 -3 tablespoons          Vital gluten
3 2/3 cups                          Whole wheat flour
2 teaspoons                       Yeast
1/2 cup                              Nuts — chopped

Add ingredients according to manufacturer’s directions. Medium color setting. Add nuts at the beep.

Apple Carrot Bread (Bread Machine Recipe)

Here’s a homemade bread machine recipe that didn’t make it into the book. Let me know if you try it.

1 1/8 cups Apple juice
1/3 cup Carrots – grated
1 1/2 Eggs
2 1/3 tablespoons Maple syrup or honey
1/2 teaspoon Salt
1/3 teaspoon Cinnamon
1 1/2 – 3 tablespoons vital gluten
3/4 cup Oat or wheat flakes
3 cups Whole wheat flour
2 teaspoons Yeast
1/3 cup Dried apples
1/3 cup Nuts – chopped (optional)

Place ingredients into bread machine pan according to your machine’s directions and choose the medium color setting. Add nuts and apples at the beep.

What is Gluten?

Simply put, gluten is a substance that is found in the grains rye, wheat, and barley. It will be found in most cereals and breads because it is in the flour used to make them. There are a few grains that do not contain gluten including buckwheat, millet, amaranth, quinoa, oats and soybeans.

A number of the recipes in Homemade Bread Recipes – A Simple and Easy Bread Machine Cookbook and on this site have vital gluten as an additional ingredient. Vital wheat gluten gives your homemade bread a number of added benefits. It helps the dough rise and stay risen. If your bread tends to be very dense and flat, adding gluten may be the answer. It also makes the dough more elastic and the finished bread have a lighter texture. Usually a tablespoon or two is suggested as the right amount to add. However, if you don’t want to add it, you don’t have to. There should be enough in the flour. Just be aware that the finished homemade bread may be more dense.

Between 0.5 and 1.0 percent of people in the United States are sensitive to gluten. Often they have a disease called Celiac disease which is an abnormal ability to digest gluten. People suffering from this disease need to be very careful not to eat anything containing or manufactured near anything containing gluten. Unfortunately if you are among this population, my book and website are not for you. There are many Internet resources available for gluten free recipes and cooking tips.

If you and your family can tolerate gluten and want to add it to your homemade bread recipes, there are a number of places you can find it. You can get it easily at high end grocery stores like Wegmans or online at Amazon. Check health food stores as well.

Homemade Bread Gift Idea

The holidays are coming up fast and you may be looking for a different kind of gift for those people in your life who seem to have everything. I recently remembered a wonderful homemade bread recipe that I received as a gift many years ago. I dug out the instructions so you can try it too. Besides making great homemade bread, this recipe also allows you to share your love of bread making with your friends.

Friendship Bread Starter

1 tablespoon (envelope) dry yeast
1 cup lukewarm water
5 cups whole wheat bread flour
4 cups milk, room temperature
1 1/2 cups light honey

1. Allow several days (14-15) to make the starter.

2. Dissolve yeast in water. Add 1 cup flour and stir. Let stand at room temperature, in a non-metal bowl, covered with cheesecloth for 24 hours. Stir and let stand another 24 hours.

3. Combine yeast mixture with 1 cup flour, 1 cup milk and 1/2 cup honey. Cover with cheesecloth and let stand at room temp. for 48 hours. You will begin to smell the sourdough odor. (If it’s not active by now, add 1/2 cup flour, 1/2 cup milk and 1/4 cup honey and let stand at room temp. for another 12-24 hours.)

4. In a large, non-metal bowl, combine starter, 1 cup flour, 1 cup milk and 1/2 cup honey. Mix well. Cover with plastic wrap and let stand for 5 days at room temp. Stir well each day.

5. On the fifth day add another cup of flour, 1 cup of milk and 1/4 cup of honey. Mix well.

6. After 5 more days, add the final cup of flour, final cup of milk and 1/4 cup of honey. Now that the base is ready, you give some to your friends. You can give 3 cups away, keeping one for yourself to either make more starter or to make 2 loaves of bread.

When you give it to your friends, give them these instructions with it. For your convenience, you can download this document which has the instructions and recipe in a gift format.

Friendship Bread Starter
Do Not Refrigerate!

On the day you receive this present from your friend, put it in a large non-metal container and stir. Cover it with plastic wrap and let it sit out on your kitchen counter.

On days 2, 3, and 4 stir the mixture.

On day 5 add 1/4 cup of honey, 1 cup of flour and 1 cup of milk and stir well.

On days 6, 7, 8, and 9, stir well.

On day 10 add 1/4 cup of honey, 1 cup of flour and 1 cup of milk and stir well.

After adding these last ingredients, take 3 cups and give them to friends with a copy of these instructions. Use the fourth cup to make two Friendship Breads for yourself.

Friendship Bread Recipe

1 cup Friendship Bread starter mixture
2/3 cup vegetable oil
3 eggs
1 teaspoon vanilla
2 cups four
1 cup sugar
1 teaspoon cinnamon
1 1/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Butter and sugar for the pan

Mix all the ingredients together and add your choice of any of the following:
1/2 cup chopped apples
1/2 cup chopped nuts
1/2 cup raisins
1/2 cup coconut
1/2 cup applesauce
1/2 cup dates
1/2 cup pineapple
1/2 cup mashed berries
1/2 cup pumpkin
1/2 cup chocolate bits

Pour into two well greased and sugared loaf pans. Bake in a preheated 350 degree oven for 40-50 minutes. Cool for 10 minutes and remove from pans.
